Blue paper tends to be heavily used in the catering industry because it is a non-food colour and can be easily detected if fragments fall into food as it is being prepared. 

Blue paper handtowels are specifically designed for catering areas for the same reason. Paper handtowels can remove up to 40% more bacteria from the hands than air hand dryers. Many EHO inspectors insist on a paper handtowel being available in a kitchen environment and they are much more cost effectice than hand drying on a centrefeed roll as, being single towel dispensed, far less product is used.
