A very popular summer tipple served with various flavours chilled or cooled. Served with ice, traditionally in a tall Hi Ball glass tumbler but with so many other serving options the choice is yours.

Preparation:
- Take 900ml water, boil half and chill the rest
- Place tea into a jug and add the hot water.
- Allow the tea to brew to required strength
- Add the chilled water to the jug and place in the fridge until cool
- While tea cools chop fruit into small portions.
- Removed cooled tea and add syrup or sugar to sweeten to taste, stir until dissolved
- Add ice, top with cold water if required
You could speed up the process by making it all with cold water, but not many teas brew as well in this authors humble opinion.
Using lemon, lime, mint, raspberries, strawberries and other fruits are always a good way to give this another dimension. You could also try combinations of spices too. Lemon and Ginger is an excellent combination.
